This coffee was grown by Juan Carlos at Finca Las Mercedes in Antioquia, Colombia. Once the harvest is finished the cherries are hand-sorted removing any unripe or defective bean. The bright red cherries are sun-dried on raised beds in a special green house that allows humidity to escape. The coffee beans ferment naturally with the pulp and mucilage adding a fruity full-bodied flavour to the beans. Once dried, the beans are milled and sorted again before packaging in vacuum bags to lock in flavour.
